Zero Waste: Sourdough Pancake

- Sourdough starter
- Spring onion
- Sesame seeds
- Salt
- Olive oil
You can also make a dipping “sauce” with:
- Soy sauce
- Vinegar
- Sesame oil

- Cast iron pan, with a lid.
- Smal dipping bowl.

Chop the green onion into small pieces.
Pancake Link to heading
- Heat the pan on medium-low.
- Add olive oil to the pan.
- Pour in the sourdough gently.
- Add chopped up green onion on top.
- Add sesame seeds on top.
Now you wait until the bottom is well toasted, golden brown (3-5 minutes).
- Add olive oil on top, then flip.
- Put the lid on, wait around 3-5 minutes, then check to see if the onion caramelised well and the sesame seeds toasted nicely. Be careful not to burn them.
Once it’s done, sprinkle salt on top and slice it into triangles.
Dipping “sauce” Link to heading
It’s actually called a vinaigrette
. Mix 10g
soy sauce, 3g
vinegar, 5g
sesame oil and that’s it!

You can replace the spring onion with:
- Regular onion
- Garlic
- Fresh herbs (basil)
And the sesame seeds with:
- Poppy seeds
- Sunflower seeds
- Nuts
